Ingredients:
- 1 cup cooked spinach (157 mg magnesium)
- 1 ripe avocado (58 mg magnesium)
- ½ cup walnuts (95 mg magnesium)
- 2 garlic cloves
- ¼ cup olive oil
- 1 tablespoon lemon juice
- 8 oz whole wheat pasta
- Salt and pepper to taste
Instructions:
- Cook the pasta according to package instructions.
- In a blender, combine spinach, avocado, walnuts, garlic, lemon juice, and olive oil. Blend until smooth. Season with salt and pepper.
- Toss the cooked pasta in the creamy pesto sauce and serve.
