Ingredients:
- 1 cup cooked black beans (120 mg magnesium)
- 1 cup cooked spinach (157 mg magnesium)
- 1 avocado, sliced (58 mg magnesium)
- 8 small whole wheat tortillas
- 1 cup enchilada sauce
- ½ cup shredded cheese (optional)
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions:
- Preheat oven to 350°F.
- In a pan, sauté cooked spinach and black beans with chili powder, salt, and pepper.
- Place the mixture into tortillas, roll them up, and lay them in a baking dish.
- Pour enchilada sauce over the tortillas and top with cheese if desired.
- Bake for 15–20 minutes, until heated through. Serve with avocado slices.
